When Vin gets sick, I swear to god he is the biggest baby ever. It's like he's dying or something. He wanted to call his momma for sympathy and her special chicken soup, but I wouldn't let him. "Oh grow up!" I'm saying as I wait on him hand and foot. I'm as bad as she is. I made Potato Jalapeno Soup and he had 2 humongous bowls. Couldn't be that sick.
 Anyways, I don't admit it, but I love to feed him. (No, I never ever admit it.) He wants me to make more tomorrow. Next time, I'll add the jalapeno amount that I want. When it comes to hot stuff the kid is such a wimp. I used the lowest amount, and it was a mild salsa heat level. But he's sick, so I decided to go easy on him today...

Marlon Brando and Bell Peppers [Jan. 27th, 2007|09:32 pm]

Marlon Brando was hot back in the day. You’d never guess that if you’d seen The Godfather, but wow. He had that electricity that makes every little move he makes fascinating. Wish I had that. Anyway I watched an old movie of his while I cooked this up last night, an Indian spiced pilaf with bell peppers. Once I saw the recipe, I hopped on it, because I actually had bell peppers left over from Vin’s fajitas that he never made. It’s also got garam masala. And if you know Vin, you know he’s a sucker for "grandma masala".

Here’s where I screwed up. When I substituted one white onion for the red onion that it called for. Bad. Bad. Never again. So when I made it again, cause Vin was bitching, I had to use meat. It looks pretty, anyway. Unfortunately, I’m almost out of my garam masala and I don’t remember where I got that version from. Anyone recommend a favorite garam masala blend? Not too cinnamony, please.

BAKED Jalapeno Poppers! TRY THEM. [Jan. 9th, 2007|06:40 pm]

So I get these crazy pounding urges for fried foods…especially after a good night of partying. You know, breaded cauliflower, french-fries, tater tots, anything deep fried really.
Finally I can tell you guys about what I made for my friend’s New Years party. I couldn’t talk about this recipe until now because Courtney of Naughty Curry told me not to tell anyone about it until she had her post up first. Jalapeno Poppers that are baked with Indian spices. [RECIPE HERE] Oh my god. Oh my god, they are d-fricken-lish. Juicy, satisfying, luscious, and so yum. For the party, I made a quadruple batch and they were quickly gone. EVERYONE loves em! I'm going to make these tomorrow night just for myself. If I add my extra hot chili powder to the spices, Vin will be bitchy as all hell, but he will stay away.

My Indian-Spiced Couscous with West African Secrets [Dec. 4th, 2006|10:17 pm]

So while I was slaving away for a belated Thanksgiving, my friend Carly was eating West African food at her boyfriend’s sisters place. They are from Sierra Leone, and the food is VERY spicy hot. No fair, no fair. What a waste -- Carly hates spices of any kind (lives on Spaghetti-o's and McDonalds). But they would be insulted if she didn’t eat, so she ate their mildest dish with tons of milk. The sister was so impressed, she made Carly a special batch and gave her some spice mix.(Carly wanted to THROW IT AWAY!Aaaaaah!)

It was couscous with some vegetable that was totally new to me. I brought Courtney, of Naughty Curry a small bowl of it, just so she could tell me what the vegetable is--. plantain, found only at the Asian grocer in our town. So that’s where I went. I lightly fried two plantains cubed in a little oil and what was left of the spice mix. Then I stirred in the Veggie Couscous Upma from the NC site [RECIPE HERE]. Oh my god! Oh my god! I immediately made Hamburger Helper to divert Vin. I'm kind of a selfish bitch when it comes to food. Oh well.

Above is Veggie Couscous Upma [RECIPE HERE]mixed with the addition of spicy sautéed plantains. Better than sex (lately, anyway. haha) The plantains were sauteed with a spicy hot mix, and the couscous Upma is a super quick-easy-tasty dish that takes 15 min. tops. (you just need frozen veggies and a lime)

I’m never ever, EVER cooking for Vin’s sister's family again. I slaved away to make the most amazing [belated Thanksgiving dinner on Sunday night, complete with all the traditional food stuff. I even learned how to make a turkey. They came. They ate. They stayed half an hour. Then the assholes left. Did they OFFER to clean? No. And they wouldn’t take any leftovers either. And get this -- they actually had the balls to suggest I have Christmas! Ha!
So there I sat with a load of leftover turkey. My friend Trobee came over and helped clean, God bless that chick. Then she made
Cheezy-Lime White Chili that Naughty Curry just posted [RECIPE HERE]. She made a double batch, then took it away to her guy friend’s pad to watch the game. It actually looked freakin' good, and took her no time at all. I highly recommend trying it if you happen to be stuck with leftovers. Or not. I’ll be making this soon with tofu. Courtney of the NC likes it better that way even.

Bang Bang Bacon Bitches put to use [Nov. 9th, 2006|07:29 pm]

Swear to god that I am like Wendy in Peter Pan, taking care of a bunch of big dumbass lost boys, except I'm always telling them, "I ain't your mama! I shouldn't have to tell you (fill in the blank.)" But who am I kidding? I love my boys. And I love to feed them. 
So the other night it was Celebration Poker Night in my kitchen (the election was over, no more phone calls, ads, etc.) They wanted a huge platter of Bang Bang Bacon Bitches [RECIPE HERE]. The deal was, if they could show me their voting sticker, I would make their Bitches. [They all believe I invented them myself, and that I am a genius. I let them -- I'm kind of a liar like that.]
 Anyway, all you do is mix in spices with cream cheese, spread it on the tips of bacon slices, insert jalapeno slices, and roll em up. Everyone LOVES them. Its cool. So...can anyone here vouch for Boca bacon?

Spicy Spinach-Potato Pattycakes [Oct. 29th, 2006|09:35 pm]

Vin made me do it. Clean out my closet. I’ve been fudging on it for months now, and he finally took no mercy. Clothes that I do not officially wear had to go. After the dramatic experience, I felt totally out of shape , and made (what Vin and I call ) Popeye Patty Cakes [RECIPE HERE]. Its basically potatoes, spinach, peas, onions, garlic and spices…all mashed up and fried in a titch of oil. The original recipe uses mustard greens, but you know Vin and his spinach. Spinach is much easier, anyway. Not so stiff.
Anyway, it is full of vitamin and stuff, bursting with spice-love and something for Vin to gobble with his plate of bacon. But then I ended up eating them with those buttery ready-made pastry shells, full of trans-fats (whatever those are) so whatever.

Loaded Gorgeous Gloopy Spicy Chip Pile!!! [Vegan, Gluten-Free] [Oct. 23rd, 2006|09:56 pm]

"Look at what momma has, boys!" I told the big group of cavemen that gathered for the big game at my house the other night.
 I’m really super proud about this one, and I’ll tell you why. Loaded nachos with NO CHEESE, and no one missed it. See, there was this awkward thing going on because one of Vin’s biggest beer drinking buds, can no longer eat wheat. That’s totally weird, since this guy used to be a garbage gut. Now he just brings rice chips and mineral water. I felt bad for the guy even though he is kind of a prick, so I used my new spice knowledge to come up with this frickin awesome wheat-free nachos. [Well actually they are honey-dijon rice chips.]
 What makes it is this sensational tangy hot Screaming Green hot sauce [RECIPE HERE] that is like this crazy jolt of flavor. Also in the pile is spicy rice, soy sour cream, and salsa. Best part is, I only told him it was wheat free. Everyone demolished it. The end.

I'm a bad liar, I know it. Said that kale was spinach (thought I'd be creative health-wise) but Vin knew. Vin, as I've said before, thinks Popeye is his thing, and he actually believes that spinach powers him up. So the little bastard wouldn't touch it. (He wouldn't work out either, and whined about losing muscle. Dork.) 

So I made a double batch of this awesome spinach dish [RECIPE HERE] just to shut him up. It's chock full of flavor with garlic and Indian spicy mojo. (I add Trobee's chile-amount in the NC recipe ). Vin gobs it on his pizza and nachos...I add it to all kinds of things, but today for lunch with NearEast lemon couscous. The Couscous takes 5 minutes, while I nuked the Spinach Stuff... that's the way, baby! I'll probably do this every day for 2 weeks. I'm like that.

My Extra-Special Egg Curry [Egg Rassa] [Oct. 11th, 2006|09:26 pm]

So I have this friend who is hot for this guy from London,(and I know it's just because of his accent), and he told her he missed a really good curry, and she lured him to her apartment by saying she cooked sensational curry... then she calls me over, and has me cook this beautiful egg curry dish [RECIPE HERE] that I make probably once every 3 weeks. I made a double batch so I could bring some home.

 I was so into Cooking Mode that I even sizzled up some sausage for Vin's version when he got home from work. It wasn't as saucy as I like it, maybe because something went wrong in the doubling process but I never get sick of it. There is a spice that kind of goes tra-la-la.....

Zucchini-Apple Bliss [Aug. 25th, 2006|06:41 pm]

"I like apples," was the first thing Vin ever said to me, at the club where he used to work. I was wearing a tight t-shirt with an apple on the chest. I thought then that it was a compliment to my chest. Turns out he really is an apple fanatic. The entire bottom drawer in our fridge is devoted to his apples. The kid knows every variety (it's his dream BTW to be an apple farmer in New Zealand one day. Don't tell him I told you.)

He's always bugging me to make fruit salad. You know, the kind with gobs of whipped cream. But I'm more of a salty-hot chick, and anyway I've had enough of that stuff from my Midwest childhood. So when I saw this recipe, using Indian spices, I thought it would be a good compromise.( I used soy yogurt so that my vegan friend could eat some, and I'll be buying soy from now on! ) Everyone at the going-away party loved it, and Vin had me make his own batch. He said it would be even better if I would add chunks of crushed Snickers bar, like his mama used to. I told him to shut up.

The Evil Curry-Ranch Oyster Crackers [Aug. 23rd, 2006|09:50 pm]

This has been the summer of these *Curry-Ranch Oyster Crackers*. They zoom with flavor. I swear they give you a buzz. I love them and I can’t stop eating them. I hate them because I can’t stop eating them. My friend Trobee of the Naughty Curry blog would bring over a batch IF I would do her laundry. Vin kept eating them all up, and the situation was causing heated fights, so I had Trobee make them with extra cayenne so that he would stay away (though sometimes he would try. How I loved seeing HIM cry for once. Haha.)

And all this time they were so simple and cheap to make. Grrr. Trobee (the little wench) made it seem like she was a spice goddess and that it was complicated. I guess the NC blog was never planning to post the recipe – but all our friends kept bugging them. So here it is. If you like spice at ALL, I promise you will go wild for these. Like everyone else. You can use however much hot stuff you want.

So Vin is always on my case to cook him shrimp. He goes on about how his mama used to serve him seafood and steak whenever he wanted, back in the day. Lately, its been, "Make the Naughty Curry shrimp tonight, babe" ever since my friend Trobee of the NC brought him some last month to taste-test. (Trobee loves one-upping me). But I hate making food I can't eat. My excuse was that I couldn't cook it until the NC blog posted on it. Well they did.

So I made their *Spicy-Hot Shrimp Curry* at the Midnight Cooking Hour last night. "Oh babe. You see? I knew you could cook more then that vegetarian crap." Ok. Thanks...Jerk.

Madras Shrimp Curry (recipe here). It is actually simple to make. You just buy a bag of frozen shrimp and cook it up in spices, garlic, onion, and tomato or Sriracha sauce. Only a dab of oil needed.

I am loving the nuts bad. For so long I avoided them because they are supposed to be high in fat. Now I figure, hey. What the hell. I’ve been reading how nuts are cholk full of happy healthy stuff, so the fat doesn’t count. Right? So there. 
Yesterday I went on a nut binge and bought five kinds of nuts in bulk at the supermarket. Then at the Midnight Cooking Hour I made my favorite Indian cauliflower dish – a Cauliflower Korma with a spiced cashew paste. Damn, it is just so good. It really, really is. I don’t share with anyone. Next time I'm gonna try it using macadamia nuts like the post talks about. Next time.

I’m gonna tell you something I’ve never admitted to anyone. I don’t eat guacamole. Reason is, I can’t stand seeing pretty little avocados get massacred into blender pulp. Serious. Do avocados grow on trees? I want an avocado tree. That’d be cool. Anyway, I made this avocado dish at Midnight Cooking Hour last night. It’s supposed to be made with quinoa, but I was out, so I tried it with couscous. Probably not as much Healthy Good Stuff, but I love it love it love it. I’ve made this often, and usually stuffing it in a tortilla with tomato and maybe hummus for the next day. I couldn’t believe how quick it was – couscous only takes 5 minutes! (Someone told me about whole wheat couscous but I can’t seem to find it.) Mmm, I just finished this off. Burp.

Picnic in a Jungle with Curried Salad [May. 15th, 2006|12:06 pm]

So yesterday Vin kept telling me it was going to rain, but I kept telling him that we were going to have a picnic. “It’s meant to be, I know it!” I kept shouting. All week it was supposed to rain, and it was sunny. All week. Yesterday it rained. Vin said "Too bad" but I knew he was secretly glad. But I wouldn’t let rain stop me. I called some friends and arranged a picnic in my friend’s apartment. (There’s jungle stuff everywhere so it felt like we were outside.
I brought the best food, a zingy Curry Chicken/Tofu Salad -- one version with tofu and the other with chicken. It was so tasty! You know how salads get all glugged down with mayo and oil? This is light, using nonfat yogurt. Wow. I'm gonna make some to eat for lunches with the remining spice mix. I tried wrapping it in big leaves of lettuce like baby leafy burritos, but the twerps kept busting, so I finally said to hell with  it. Anyway, everything was wonderful with pale ale beer and good tunes. I love picnics.

So I’ve been dying to post about this Curry-Sauerkraut recipe, but I had to wait until Naughty Curry posted it first. I gave them the hat tip about a Polish-style sauerkraut dish (thanks to Food Pornista Teaphile) and they flavored it up with Indian spices. They brought me their veg version last week to taste-test, using Boca Brats. It was so so good! Vin said it was almost good -- if it had used real meat instead of "that fake crap.” Deal with it, honey. 
I cooked up a HUGE batch for his softball buddies a few nights ago using real bratwursts. They gobbled it up like maniacs. They made me feel like Wonder Woman. I didn’t have the ajwain, but Trobee said that was okay. Just increase the cumin seeds by ¼ tsp. I also added lots of chunky pepper, and yes, Tabasco. Lots of it.

My Instant Indian Curry Sauce [Apr. 25th, 2006|05:49 pm]

I seriously wanted to swim in my Red Ruby Kulambu Sauce after I made it last night. I must have been gazing at the pan for a while, cause Vin crept up and grabbed me and freaked the F out of me. I shoved him hard. He laughed. Then he pulls his pitiful Hamburger Helper out of the fridge and dumps some of my lovely sauce over it. I don’t bother anymore.
I make the Kulambu a lot, and store it in a jar in the fridge. I’ve posted on it before, having poured it over spaghetti and veggies (the NC even posted my pic!). It’s like my instant curry sauce. It’s so full of flavor, and very tangy. It’s got a short list of Indian spices in it, but it’s really easy and just uses garlic, canned tomato sauce and onion. Last night I poured it over my bland-as-hell leftovers from TGI Fridays, and suddenly I had this awesome meal. But dammit, Vin and his buddies ate the rest of it today with their grilled steak. Of course. (I am kinda proud though cause they loved it. But shhhh.)

Happy Hangover Sunday! (I be chillin’ right now with a spicy Bloody Mary). So yeah I went to a crazy bachelorette party last night and had a great time because I was NOT in the wedding. I served up these SUPER yummy Wonton Squishies, which are like those cream cheese wonton appetizers at Chinese restaurants, only not fried, and of course spiced-up. Totally tasty, luscious mouthfeel and low fat too! They were gone in like 10 seconds. All you do is roast a few spices, mix them with the cream cheese (I used the Tofutti stuff because the Bride is dairy free) and you just plop it into wonton wrappers with a happy little jalapeno ring. Thing is, the filling is such great stuff. I made more on purpose.

Vin actually believes that spinach is what produced his large muscles... from eating it so much as a kid. Serious. The kid's a total mama's boy, so he believed any story his mom told him. So he loves Popeye.
As for me, I never liked spinach until cooking with Indian spices. Now I actually love it when Trobee has me test-taste spinach dishes for Naughty Curry. A few weeks ago she brought over some of this spinach-dal stuff, and I successfully made my own last night. So for lunch today me and Vin did the nacho thing that's pictured on the website. I used these gorgeous-hot peppers from my uncle's farm. Used two shredded cheeses, Mrs. Renfros Raspberry Chipotle salsa and Lime Tostitos. Freaking yum. Plus, I can just picture all the happy little vitamins bubbling in my body from the spicy Indian spinach stuff.
